Greek yogurt, protein powder, and peanut butter team up to make the ultimate protein-packed filling for your s’mores (instead of the typical marshmallow!), while the classic melted chocolate and graham cracker crust deliver those delicious flavors we all know and love.
This is our new favorite way to eat s’mores and you won’t see us going back to the OG version anytime soon. Not only are these a super easy no-bake dessert, but they pack a whopping 14g of protein per s’more. Doesn’t get much better than that!
We’re swapping the traditional marshmallow in these s’mores for a Greek yogurt + protein powder + honey + peanut butter filling that freezes perfectly. It’s kind of like a s’mores ice cream sandwich with a peanut butter twist. And they’re seriously SO DELISH.
What’s in These Magical Frozen S’mores
- 2% Greek yogurt: The perfect high-protein base to get these smores tasting like marshmallow creme.
- Vanilla protein powder: For an extra punch of protein and sweet vanilla flavor.
- Honey: Honey adds a lovely natural sweetness to these sheet pan s’mores.
- Peanut butter: Who doesn’t love a little PB in their s’mores? Plus, it adds even more protein and heart-healthy fats.
- Semi-sweet chocolate chips: For that classic melted chocolate goodness.
- Coconut oil: You’ll need coconut oil to ensure the chocolate sauce hardens up nicely in the freezer.
- Graham crackers: You’d be crazy to make s’mores without the crispy graham cracker crust!
What protein protein powder should I use?
The protein powder you use will dictate the flavor of your protein s’more. We used Vital Proteins vanilla protein and 365 vanilla protein, and they tasted great. We do not recommend using Truvani vanilla protein in the recipe.
Remember, every protein powder is different! Some protein powders absorb more moisture than others. If your protein layer tastes gritty or dry, add more Greek yogurt or honey.
What Else Can Go In These S’mores?
Peanut butter: Use cashew butter, almond butter, or another nut butter instead of peanut butter. You could also use sunflower seed butter for a nut-free option.
Honey: Brown sugar can be used in place of honey.
Chocolate: Use dark chocolate or white chocolate chips instead of semi-sweet chocolate.
Add more flavor: To kick up the flavor, add in some vanilla extract, caramel sauce, or even a sprinkle of cinnamon.
Why did my sheet pan protein smores come out really firm?
The longer the protein smores are left in the freezer, the firmer they will become. That’s ok!! If they are left in the freezer overnight, just let them sit at room temperature until they are easy to take a bite from.

Graham crackers don’t fit? You may have to break the graham crackers to make them fit perfectly into the pan you are using. Don’t worry, it won’t mess up your smores!
How to Store
These sheet pan s’mores can be stored in an airtight container in the fridge for up to 3 days. They can also be frozen and enjoyed at a later time. Just thaw them out a bit in the fridge or on the counter before serving.
